This is a very simple recipe that I use when I want a cream filling that is low in fat and calories and stable when baked. The filling can be used for sweet items or savory by just omitting the sugar and adding herbs instead. The secret ingredient is beans. You can use dried beans, and put them into the crock pot and cook until soft then drain. Canned beans will also work, drain and rinse them before using.
Ingredients:
Using Canned Beans
1 (15oz.) can white beans (Navy or Great Northern) drain and rinse the beans you should have left about 1 cup or 225-250g of beans
Dried Bean Option
Package of dried white beans (Navy or Great Northern), cook according to directions on the package. I usually let mine set in water overnight, then drain in the morning. Add soaked beans to the crock pot with the required amount of water and turn on. Once they are soft, drain and reserve about 1 cup (225-250g) for this recipe. I usually freeze the remaining amount in increments of about 1 cup or (250g) in small containers for future use.
About 1c. (250g) of cooked or canned white beans
1/4c. sugar (50g)
1 (15oz) Ricotta cheese container
1 tsp vanilla
3 T. Powdered Sugar
Directions:
In your food processor put the blade on and add the cooked or canned beans. Turn on the processor and while running add the sugar. Keep the food processor running until the bean mixture is smooth, it will take a few minutes. You may have to scrape down the sides of the bowl to get everything processed.
Stop the processor and add the container of Ricotta cheese. Put the lid back on and turn on the food processor. While the processor is running add the vanilla and the powdered sugar to the mixture. Scrape the sides down to make sure everything is well blended and the mixture is smooth.
Stop the machine and taste the mixture for the desired sweetness. If you want it sweeter add more sugar, (powdered or granular). Process until well blended.
This mixture freezes very well, and makes quite a bit so if you don't use all of it, freeze it.
