Canned salmon is an excellent buy and since the canned salmon is caught in deep water it's very good for you.
Recipe (8 Servings)
1 (14.75oz can) of Pink Salmon Drain liquid
1/2 c. onion finely chopped
1/4 c. celery (1 stalk) optional
1 c. bread crumbs (whole grain)
3 T. mayonnaise or salad dressing
2 lg. eggs (beaten)
2 tsp. lemon juice
1 T. parsley fresh if you have it (2 tsp. dried)
1/4 tsp. garlic powder
In a medium bowl, combine the drained salmon, breadcrumbs, onion, celery, mayonnaise, egg, lemon juice, parsley and garlic powder and gently mix until well blended. The mixture will be moist.
Have a plate with about 1/2 cup bread crumbs on it.
Heat a large frying pan with about 1/8 - 1/4 inch oil covering the bottom
Using a #12 scoop cookie scoop (or 1/3 measuring cup), scoop the mixture out into your hand and slightly flatten it. Place it on the bread crumbs on the plate and cover the patty with crumbs. Gently place the patty into the hot oil and fry until golden brown on one side then flip over and repeat. Put 4 into the pan at at time.
Once they are golden brown on both sides about 10 minutes remove and drain on a paper towel.
We will freeze them so in the future I have something quick and ready to go for lunch or dinner. These are very good on a homemade onion roll with lettuce and cheese.
Salmon not so bad as a burger, give it a try!
Tip On Bread Crumbs
Bread Crumbs are easy to make and if you have stale bread or your better half does not like crusts save them. I save bread and cut it into chunks and freeze it. Once I get a bag full, I will dry them out in the oven. Usually after I have baked something while the oven is still warm I will spread the bread on a cookie sheet to dry them out. Once they are dry I freeze them until I need crumbs.
I use a food processor to make the crumbs, but I have found if they are dried out and frozen they will make much finer crumbs. Pulse them in the food processor and then put them back in the freezer to use in casseroles, breading fish, or chicken or what ever you need. You can season them with herbs if you like.
