Pancake & Waffle Mix Instructions
LIGHT & CRISPY WAFFLE MIX
Recipe: Yields 12 (10” round waffles) ....4 servings
Make the whole recipe and freeze the rest, I reheat mine in the toaster but my husband microwaves his.
Additional Ingredients
Night before:
1½ cup hot milk (170 degrees)
6 T. butter (3 oz)
2 T. maple syrup
1 tsp. vanilla
2 large eggs
In a large bowl, the night before, heat the milk (hot), put in a large mixing bowl, add the butter, maple syrup, eggs and vanilla. The mixture will be cooler now, add the contents of the waffle mix stir, and cover with plastic wrap and let sit on the counter 1 hour. You could make the waffles now but they are better if you now put the mixture in the refrigerator overnight and cook the next day.
Heat the iron to hot. Make the whole recipe and freeze the leftovers for the next meal or you can keep the batter in fridge for several day

2 large eggs
2 cups buttermilk
4 T Butter (1/2 stick)
Microwave: 4T Butter
Add to the melted butter 2 cups buttermilk and the 2 large eggs, mix well.
Bowl:
Place all the dry ingredients, in a bowl add the liquid ingredients mix until just combined. To thick add more milk to get the desired consistency.
