Whole Grain Biscuit Mix
Recipe Yields 9 Biscuits
(add 2 T sugar for sweet biscuit)
7 T shortening butter flavored best (84g)
1/3 cup milk
1 cup buttermilk
Empty contents of mix into a bowl add sugar if making a sweet biscuit.
Cut the shortening into the flour until it resembles course cornmeal. Mix the liquid ingredients together in a separate container. Pour the liquid ingredients over the flour mixture and mix until just combined, it will look like cottage cheese. Scoop out 1/3 cup scoops and put into a round 12” cast iron skillet. Scoop 8 biscuits around the edge and one in the center, a total of 9 biscuits they will be touching. (Don’t heat skillet)
Oven temperature: Bake at 425 Degrees for 15-20 minutes
Variations: Add fresh herbs, or cheese, for a savory biscuit or cinnamon, cloves, or chopped dried fruit for a sweet biscuits
Basic Muffin Mix
Low in calories!
Recipe: Yields 8 Standard Size Muffins
½ tsp. cinnamon
3 T butter (room temperature) or oil
3 T honey or light molasses
1 lg. egg
½ cup raisins, chopped
¾ cup water
½ cup chopped nuts (optional)
Empty mix into a small bowl and add the 1/2 tsp. cinnamon to the dry mixture and mix well.
In a second larger bowl, cream the butter and honey (or stir the honey into the oil if you used oil). Beat in the egg and add the raisins and water. Stir the dry ingredients into the liquid, mixing enough to moisten. Fold in the nuts, if you want to use them. Spoon into the muffin tin.
Oven temperature: 375 degrees for 12 -18 minutes. Muffin will be pale if you used honey not molasses
Variations: Substitute orange juice for the water and ½ cup chopped dried apricots instead of raisins. These muffins are very good without eggs and butter use oil and increase the orange juice by ¼ cup.
